Over the past few weeks I’ve been trying to incorporate as many new dishes into my meal plan as possible. Usually, I don’t dedicate as much time to cooking as I’d want to because there are so many other things on the agenda. So every so often it happens that I’m just cooking the same meals due to lack of creativity and simply because I can cook them from scratch. However, I did get bored eating the same old dishes all the time and want to try new things. Pinterest is my number 1 source of inspiration when it comes to healthy but easy recipes. As soon as I came across this light salad, I knew it had to be re-pinned re-created! I mean, how could I not? With ripe avocado, a whole bunch of citrus, and the right amount of spiciness from the chili flakes, it’s just perfect – easy to prepare, tasty and just right as lunch for warmer days. I switched out the jalapeños for some peppery sprouts, and added some baby spinach to round off the salad.
For my adaption of the Citrus & Avocado salad you’ll need:
- ½ avocado
- slices from 1 orange
- slices from 1 grapefruit
- some peppery sprouts (garden cress or similar)
- a handful of baby spinach
- ½ lime, juiced
- chili flakes
- parsley or cilantro leaves for garnish
Super easy, comes together in minutes, and hits just the right spot on a hot day like today. Eat on its own, or serve alongside grilled fish or chicken. I’m sure you’ll love it as much as I did. Have a happy weekend!
